Apple pies were quite popular in Europe,especially in England,well before they became an American popularity of the apple pie in the United States coincided with the country's growth into the world's largest apple-producing old fashioned apple pie is reminiscent of classic versions baked over several generations in American kitchens.
早在成爲美國象徵之前,蘋果派就已經在歐洲——特別是英國十分受歡迎了。蘋果派在美國開始流行的使其與美國成爲全球最大的蘋果生產國的時期相吻合。品嚐蘋果派時,總是讓人想起當初美國廚房中經過幾代人烘烤的經典版本。

用料  

麪糰/ Dough
低筋麪粉/Low-gluten flour 200g
高筋麪粉/High-gluten flour 50g
黃油/Butter 100g
餡料/Stuffing
蘋果/Apple 1個
白砂糖/White sugar 30g
黃油/Butter 30g
澱粉/Starch 10g
裝飾/Decoration
蛋黃/Yolk 1只

  1. Prepare the high-gluten flour,low-gluten flour and butter,and prepare the dough.
    (*The main function of high-gluten flour is to increase the toughness of the dough and provide flavor,which can be added as appropriate.)
    準備好所需的高筋麪粉、低筋麪粉與黃油,準備製作麪糰。
    (*高筋麪粉的主要作用是爲麪皮增加韌性和提供風味,可以酌情添加。)

  2. Put the ingredients in a bowl,add butter and appropriate amount of salt,and mix careful not to apply too much force to prevent ribbing.
    將原料放入碗中,加入黃油與適量鹽,拌勻。注意不要太用力,防止起筋。

  3. Add an appropriate amount of ice water,knead it into a ball,and put it in the refrigerator to freeze for 20 minutes.
    再加入適量冰水,將其搓揉成團後,放入冰箱冷凍20分鐘。

  4. Fold the dough repeatedly to make the pastry richer.
    反覆摺疊麪皮,使酥皮口感更豐富。

  5. Freeze again and repeat the above steps twice.
    (*This will make the dough more crispy and delicious,but if you want to save time,you can simplify it properly!)
    再次冷凍,重複上述步驟兩次。
    (*這樣能使麪皮更加酥脆可口,但如果想節省時間也可以適當簡化喔!)

  6. Wash, peel and cut apples into small cubes.
    將蘋果洗淨、削皮並切成小丁備用。

  7. Heat the melted butter in a pan,add diced apples and stir fry.
    在鍋中加熱融化黃油,放入蘋果丁,翻炒。

  8. After the diced apple changes color, add starch solution and white sugar, continue to stir fry, and then out of the pan.
    待蘋果丁變色後,加入澱粉溶液和白砂糖,繼續翻炒,然後出鍋。

  9. Combine the prepared crust with the filling, wrap it, and seal it with a fork.
    將已做好的餅皮與餡料組合起來,包好,用叉子封口。

  10. Set the oven to 200°C to preheat and bake for 30 minutes.
    (*The temperature and time are not completely fixed, and can be adjusted appropriately according to the condition of the oven itself.)
    將烤箱設定爲200℃預熱,烤制30分鐘。
    (*溫度、時間並不完全固定,可以結合烤箱自身的狀況適當調整。)

    經過漫長的等待——滴——滴——叮!我們的蘋果派出鍋啦!
