Bakers flour 15g

Main dough
Bakers flour 215g
Cocoa powder 15g
Milk powder 15g
Salt 3g
Yeast 3g
Brown sugar 35g
Tangzhong  70-75g
Egg 50g
Milk 55±g
Chocolate chips  40g
Unsalted butter (soften) 25g

Batter for the surface
Condensed milk  45g
cake flour 50g
Milk 55g
Cocoa powder

**Preheat oven to 175C/350F
**Bake at 175C/350F for 22mins

用料  

starter
flour 6 g
water 30 g
dough
flour 107 g
cocoa powder 7.5 g
milk powder 7.5 g
salt 1.5 g = 1/4 tsp
yeast 1.5 g = 1/2 tsp
brown sugar 17.5 g
egg 25 g
milk 27.5 g
softened butter
butter 12.5 g
chocolate chip
chip 15 g
topping
condensed milk 15 g
cake flour 17 g (half corn starch)
milk 14 g

chocolate chip bun的做法  

  1. make starter

  2. wait till the starter to cool

  3. ------- make the main dough
    mix all and rest for 20 min
    knead for 10 mins

  4. add in chocolate chips and mix well for 1 min

  5. add in butter and knead till windowpane

  6. rest till double volume

  7. divide and shape into balls
    rest for 15 mins
    degas and fold in quarters
    roll into a ball

  8. proof for 1 h
    - have a bowl of hot water in the oven for humidity

  9. make top batter and spread on top of the bread

    dust with cocoa powder

  10. bake at 350F for 22 mins
