紅三剁牛排

用料  

牛排steak 1塊(1pound)
橄欖油extra-vargin olive oil 1/4勺 (1/4cup)
白蘑菇Cremini mushrooms 8只 (8ounces, quartered)
洋蔥onion 1個 (1, chopped fine)
蒜瓣garlic cloves 3瓣 (3, minced)
牛至oregano 一點點( 1/2teaspoon dried)
罐裝紅辣椒jarred roasted red peppers 小半罐(1.5 cups, dry and chopped)
罐裝曬乾西紅柿oil-packed sun-dried tomatoes 適量(1/4 cup, chopped)
醋Balsamic vinegar 45ml(3 tablespoon)
羅勒chopped fresh basil 1把(3 tablespoon)

紅三剁牛排的做法  

  1. 用廚房紙吸乾牛排的血水,加鹽和黑胡椒調味。中高火,加兩勺油,油熱後煎牛排,約1分鐘一面。Pat steaks dry with paper towels and season with salt and pepper, gently press sides of steaks until uniform 1.5 inches thick. Heat 2 tablespoons oil in Dutch oven over medium-high heat until just smoke. Brown steaks, about 2 minutes per side.

  2. 中火,兩分鐘翻面一次。煎完之後撈出放盤子裏。Fillip steaks again, reduce heat to medium, and continue to cook, flipping every 2 minutes, until steaks are well browned and meat registers 120 to 125 degrees( for medium rare) or 130-135 degrees (for medium),7-10 minutes. Transfer steaks to serving platter and let rest until making sauce.

  3. 倒油,加洋蔥模糊和鹽。中火蓋上蓋子直到蘑菇出水,約三分鐘。開啟蓋子等蘑菇直到蘑菇幹了,約5分鐘。Add mushrooms, onion, 1 tablespoon oil, and 1/4 teaspoon salt to fat left in pot. Cover and cook over medium heat until mushrooms have released their liquid, about 3 minutes. Uncover and continue to cook until mushrooms are dry, about 5 minutes

  4. 加蒜瓣、牛至,有香味之後加🌶️🍅和醋,大約一分鐘後關火加鹽和黑胡椒調味。把這些菜菜澆到第二步的牛排上。Stir garlic and oregano and cook until fragrant, about 30. seconds. Stir in red pepper, tomatoes, and vinegar, scraping up any browned bits. Cook until vinegar is reduced slightly and begins to coat vegetables, about 1 minute. Off heat, stir in basil and season with salt and pepper to taste. Spoon vegetables over steaks and drizzle with remaining 1 tablespoon oil. Serve.
