用料  

幹香菇/dried shiitake 12-15枚
木耳/wood ear 4-5朵
銀耳/sliver wood ear 1-2朵
黃花/yellow daylily 一把/handful
荸薺/water chestnut 10-12顆
豆泡/fried tofu 10-12個
竹筍/bamboo shoots 200g
花椒/pepper corn 10-12顆
大料/star anise 1枚
桂皮/cinnamon stick 1塊
香葉/bay leaf 1片
辣椒節/chilli 5塊
番茄醬/tomato ketchup 50g
生抽醬油/soy sauce 2 table spoon
老抽醬油/dark soy sauce 2 tbs
冰糖/rock sugar 20g
香油/sesame oil 5g

  1. 香菇、木耳、銀耳、黃花菜泡發,其中泡香菇的水存好備用。
    泡發好的食材改刀切成合適的大小備用。
    Soak the mushrooms in hot water for 2 hrs. Keep the liquid from the shiitake. Chop ingredients into bite size pieces.

  2. 這是我之前一次做素什錦用到的食材,當時沒用銀耳而是腐竹。之前還加過花生,泡芙,麪筋之類的,口感同但口味一樣好吃,所以大家可以加自己喜歡的原料試試。
    This is an example of different mixture of mushrooms, for example use of fresh mushroom, tofu skin, etc.

  3. 熱鍋涼油,加入花椒烹出香味,小心瀝出花椒留下油,加入大料,辣椒段。
    加入木耳爆炒;
    再加香菇,翻炒;
    加黃花,翻炒.
    Add oil in hot wok, heat up pepper corns and remove them.
    Add star anise, chillies wait until the smell comes out.
    Then add wood ear first, let it cook for 2 mins, then add in the shiitake and yellow flower day-lily, and stir.

  4. 加入生抽,老抽,
    加冬筍,荸薺,翻炒;
    Add in soy sauce, dark soy sauce, gently stir.
    Add in bamboo shoots, water chestnuts, and stir.

  5. 加入銀耳,小心翻炒;
    Add in silver wood ear, gently stir.

  6. 分3-4次加入香菇水,這樣做是爲了保證鍋內的溫度不會一下子降到太低;
    加入桂皮,香葉,冰糖,小火一會,直到冰糖融化。
    Add in cinnamon, bay leaf, rock sugar (in pieces); add the liquid from shiitake in small amounts, add some wait until that has heated up, and then add more, keep doing this until the liquid reaches the top of the mixture.
    Use lower heat and cover until the rock sugar melts.

  7. 加入大量番茄醬,一方面填色,一方面加入酸甜味,另一方也能有一些勾芡的作用。
    不喜歡的親也可以不加或者少加。
    Add in tomato ketchup, add to taste. Stir in and let simmer for 5-10 mins.

  8. 將豆泡放在表面,因爲他們會吸收很多湯汁所以放在最後加入。炸豆泡本身已經是熟的了,所以不用擔心炒不熟,蒸汽的熱量足夠了。
    Put fried tofu on top of the mixture, let the steam heat them up.
    Then stir thoroughly, making sure tofu is covered by broth.

  9. 大火收汁,翻炒均勻,出鍋!
    Let the tofu absorb the broth.
    Then it's ready.

小貼士

*原料不是一成不變的,大家可以根據自己的喜好加減;
*泡香菇的水留好後邊加到湯裏能添味,但小心碗底會有沙子或渣滓,澄過只用上層清淨的部分;
*菌菇類嘌呤含量高,痛風患者避免食用。
* Feel free to add your own ingredients;
* Add the water used to soak the shiitake mushrooms to the dish, but be careful not to add sand or scum at the bottom of the bowl, add only the clean part on the top;
* Mushrooms contain a high amount of purine, not suitable for people suffering from gout.
