Raspberry Mousse Cake 樹莓慕斯的做法
巧克力蛋糕層Chocolate cake layer:
準備食材
Prepare the ingredient
烤箱預熱180度
Preheat the oven to 180 degrees蛋清蛋黃分離 將蛋清放入無油無水的容器中
Separate the yolk from the egg white. Place the egg whites in an oil-free and water-free container向蛋清中分三次加入白砂糖 用打蛋器打發至乾性發泡(提起打蛋器可以拉出挺直的角)
Add the granulated sugar to the egg whites in three times and beat with a whisk until dry peaks form (Lift the whisk and can pull out the straight corners)打發好的蛋清分三次加入到蛋黃中 攪拌均勻
Whisk the beaten egg whites into the yolks in three separate batches. Stir well加入過篩厚的低筋麪粉 攪拌均勻
Add in the sifted low gluten flour and stir well加入過篩後的可可粉 攪拌均勻
Add in the sifted cocoa powder and stir well倒入模具中(約1cm厚)放入預熱好的烤箱中 180度 8分鐘
(上述的量大概用6寸的模具)
Pour into the mould(about 1cm thick) and place in the preheated oven at 180℃ for 8 minutes
(About 6 inches of mold is used for the above quantity)將烤好的巧克力麪包層放入慕斯模具中(要塞滿哦)放置一邊備用
Place the chaocolate bread layer into a mousse mold (fill well) and set aside樹莓慕斯層Raspberry mousse layer:
準備食材
Prepare the ingredient將樹莓搗碎
Mash the raspberries將白砂糖倒入樹莓醬中 攪拌均勻
Add the sugar to the raspberry sauce and stir well吉利丁片放入冷水中泡軟
Soak gelatine tablets in cold water to soften將樹莓醬放入微波爐加熱約30秒 拿出後加入吉利丁片 攪拌均勻
Microwave the raspberry sauce for about 30 seconds. Remove and add in the gelatine. Stir well將淡奶油打發至有紋路
Whip the light cream until it is textured將淡奶油加入樹莓醬中 攪拌均勻
Add the light cream to the raspberry sauce and stir well將樹莓慕斯糊倒入鋪好麪包的慕斯模具中 抹平 放入冰箱冷藏備用
Pour the raspberry mousse paste into the bread-lined mousse molds and flatten. Refrigerate巧克力慕斯層Chocolate mousse layer:
準備食材
Prepare the ingredient
將巧克力切成碎片
Cut the chocolate into pieces.
吉利丁片放入冷水中泡軟
Soak gelatine tablets in cold water to soften將1/2白砂糖加入牛奶中 剩餘白砂糖加入蛋黃中 分別攪拌均勻
Add 1/2 of the sugar to the milk and the rest of the sugar to the egg yolks. Stir well小火加熱牛奶至微微沸騰
Heat the milk over a low heat until it comes to a simmer將一半牛奶倒入蛋黃液中 攪拌均勻
Pour half of the milk into the egg yolk mixture and stir well將牛奶蛋黃液倒回奶鍋裏
Pour the milk yolk mixture back into the milk pan小火不斷加熱攪拌 直到其變得微微粘稠 離火
Keep the heat low, stirring constantly until it becomes slightly thick. And then leave the heat加入泡軟的吉利丁片 攪拌均勻
Add in softened gelatine tablets and stir well將其倒入巧克力碎中 攪拌使巧克力完全融化 攪拌均勻
Pour it into the chocolate chips and stir until the chocolate has melted. Stir well將淡奶油打發至有紋路
Whip the light cream until it is textured將淡奶油加入巧克力醬中 攪拌均勻
Add the whipped cream to the chocolate sauce and stir well將巧克力慕斯糊倒入慕斯模具中 抹平 放入冰箱冷藏備用
Pour the chocolate mousse paste into the mousse mould and flatten. Refrigerate樹莓鏡面Raspberry mirror:
準備食材
Prepare the ingredient
將樹莓搗碎
Mash the raspberries
吉利丁片放入冷水中泡軟
Soak gelatine tablets in cold water to soften
將泡軟的吉利丁片隔水融化 倒入樹莓泥中 攪拌均勻
Melt the soaked gelatine and pour it into the raspberry puree. Stir well用細篩過濾樹莓醬
Sift the raspberry sauce through a fine sieve淋在慕斯上 抹平
放入冰箱冷藏至3小時以上
Pour over mousse and smooth
Refrigerate for more than 3 hours從冰箱中拿出 脫模
Take it out of the fridge. Mold release擺盤

一定要將蛋清放入無油無水的容器中哦 否則無法打發Be sure to put the egg white in an oil-free container or it won't beat
